It was beautiful last week. Seriously. Beautiful.

When it's nice out, and especially when it's warm, my eating habits completely change. While in the winter I love starchy, carby foods with lots of cheese, root veggies, and melty-warmness, in the summer I'll subside on dinners consisting of things like veggie pasta salad and caprese bruschetta. Cool, light, refreshing!

Since it was so nice out, I really wanted to make something light and fresh, and I also wanted to go outside and enjoy the sun in the process. Aha! I thought. The farmer's market! But 'twas not meant to be because it is April and there is no such thing as a farmer's market that is open in April. :( #sadday

Luckily I found a really adorable open-air produce stand less than ten miles away from our house. I picked out some yummy fruits and veggies and made a delish tomato and mozzarella topping for sliced pieces of french bread. (sorry no pics #sad)

I also bought my first ever fresh ginger root. I know, I know... I basically committed heresy against all the higher powers of cooking, and I'm sorry. If I had known how incredible fresh ginger is compared to not-fresh ginger, I would never have let it happen.

I think I just always thought that fresh ginger would be a pain to slice/mince/crush/etc. But it's really not (why didn't anyone tell me this?) and it tastes like a billion times better than the powdered stuff. I also thought I wasn't a fan of ginger, but now I know better. I'm not a fan of ground ginger that comes in a container from the grocery store. But I am a fan of a fresh ginger root pulled from the ground. Yum! :)

Anyway, I'm eagerly awaiting the summer farmer's market season. Best reason to go outside and enjoy the weather, because it leads to cooking and amazing-ness. Perfect. :)
