But I made some epic meatballs tho the other day. I actually used a Pinterest recipe this time, and can I just say how much I LOVE Budget Bytes? I have loved their chicken taco bowl since, like, forevah, and I feel this meatball recipe becoming a staple too.


Teriyaki Meatball Bowls 


Verdict: A


Absolutely yummy! These were so good, and such a good way to use up leftover ground chicken or pork or, like I used, ground beef. I think the best thing about these is that the only thing I had to buy was the green onions. I already had the other ingredients in my fridge/freezer/pantry. Actually, I think that's why I found it on Pinterest—I was looking for recipes to use up some of the things I had on hand. #winning

What I didn't like was the time it took to make. In fact, I put off making it for a few days after I found the recipe because of the fact it would take a whole hour or more to make. That's like.... the amount of time I'd want to spend on a really fancy meal, not one I'm making on a weeknight for the hubby and me, where I'm just trying to use up our on-hands and avoid leaving the house.

But I digress. I think ideally this would make a really good meal prep recipe. Just make the meatballs a week in advance and freeze them raw, then pop in the oven and bake while the rice cooks. Yeah? Yeah, I think so. :)
