I only cooked a couple of times this past week (well, that's a lie... I did make mac-and-cheese from a box and had leftover pizza delivery... it's all about balance peeps), but here's what I made! And also here's what I ate over the weekend. It was my weekend off, so I had a pretty lazy/fun time hanging out with friends and catching up with family over the phone and enjoying some much-missed sunshine. It was like 65 degrees in Washington all weekend, say wuuuuut?!
A friend came over one night this week, and I made one of my all-time-favorite recipes eveeeerrrrr from The Pioneer Woman. I don't remember where I found this, I think I might have seen it on her show once. And to be honest, I don't really follow THE recipe. It's like not even really a recipe.
Basically the things I picked up about this one are 1) chop that lettuce real thin, you want strips not chunks, 2) only use romaine, 3) grill that corn baby! I used my cast-iron grill pan and frozen corn, and 4) mix a half-salsa, half-ranch dressing for a blast of amaze. That's basically it... I like to add green chiles, mexican blend shredded cheese, black beans.
You can also crunch a handful of tortilla chips over the top. Add avocado for extra awesome. It's that easy.
One thing I crave every now and again is Thai beef salad. I had Thai beef salad the very first time with a very dear friend (hi Nancy!) at one of her favorite restaurants in my hometown. It's amazing. I've only made it a few times. The trick is herb dressing. It's really easy—season and pan-sear that beef, slice thinly, toss with greens (I used butter, romaine, and spinach) and red onions + cucumbers, and drizzle a dressing of amazing lemongrass, lime, cilantro, mint, basil, rice wine vinegar, brown sugar, soy, chile flakes, chopped jalapeño. You can google search a basic recipe. So yum, so refreshing!
Yeah, it was goooooooood.
On Sunday, I went with a friend to THE cutest little brunch place ever in Northgate-ish area called Wild Mountain Cafe. This dish you see above blew. my. mind. You'll never guess what it was or how good it was when I tell you....
French toast, stuffed with cardamom-infused tahini, with lemon-honey syrup. Um, yeah. I am now on a mission to figure this out and make it at home. OMG.
I bought a bunch of meat last week on sale, so I want to try to use that up this week. I'm thinking about Chrissy Tiegen's lettuce wraps, and maybe a baked chicken. Also, I ran out of the pancakes I froze last time I made a big batch, so I'm thinking that will happen sometime this week. I have a really great recipe I'll share.
